Sentio Pinot Noir 2025 Size::1 Bottle Pale yellow with green tingesHandpicked. The vineyard is dominated by flint and red volcanic soils over a limestone bedrock. Fruit was completely destemmed, crushed, then fermented in open top, concrete fermenters. Pressed then aged in a combination of used demis, hogsheads, and 1200L foudre.
